How to make Korean Kimbap Rolls

Ingredients

  •  1 cup cooked short-grain white or brown rice (slightly dry)
  • 2 sheets nori (seaweed)
  • 4 thinly sliced carrot strips
  • 4 cucumber strips, julienne-style, pickled in rice vinegar
  • 4 strips of avocado
  • 1 egg (optional)
  • 2 long strips pickled yellow radish (danmuji)
  • 2 strips cooked fish cake (optional)
  • ½ tablespoon salt
  • ½ tablespoon sesame oil
  • ¼ tablespoon toasted sesame seeds
  • ½ tablespoon rice vinegar

Instructions

1. First, cook the rice according to the package instructions, making sure to use slightly less water so the rice comes out on the dry side. This is important to avoid sticky or soggy rice. Once the rice is cooked, let it cool completely until it’s just slightly warm.

2. While the rice is cooling, prepare the fillings for your Korean kimbap rolls. Start by cutting the carrot and cucumber into thin strips. Soak the cucumber strips in rice vinegar for a few minutes to give them a slight tangy flavor.
