My Go-To Healthy Meal

When I first switched to a healthy plant-based diet over 8 years ago, smoothies became a big part of my daily routine. I relied on them for breakfast, and sometimes even had them for dinner or as a dessert after a meal. What I loved most was their versatility—you can throw in any fruits and vegetables you like to create a healthy, plant-based smoothie.

I got really creative with my smoothies during those first few years. One of my favorite things to make was smoothie bowls. These were like smoothie bowls topped with extra fruit, berries, and crunchy granola, turning them into a delicious and satisfying meal. Smoothies not only kept me energized throughout the day but also satisfied my cravings in a healthy way.

As I learned more about plant-based eating, I began to experiment with different flavors and ingredients, and soon I had a few go-to healthy smoothie recipes. What I liked about these smoothies was how easy they were to make, and how they packed a punch of nutrition in just one glass.

They were a great way to start the day or give me an energy boost when I needed it. Whether I was having a busy morning or just needed a quick meal, healthy smoothies were the answer.

Another great thing about smoothies is that they’re low in bad fats and sugars. When you make them at home, you can decide what goes in them, making them a healthier choice compared to some other snacks or drinks.

Lastly, smoothies are easy to make and taste delicious! You can mix different fruits and veggies to create fun flavors. Whether you’re having them for breakfast, a snack, or even dessert, plant-based smoothies are a tasty and healthy way to add more good stuff to your diet.

Healthy Smoothie Recipe

Serving: Makes 1 large or 2 smaller servings

Smoothie Bowl

Ingredients:

  • 1 cup frozen mixed berries (such as strawberries, blueberries, or raspberries)
  • 1 ripe banana, frozen
  • 1/2 cup of frozen pineapple
  • 1 cup fresh spinach or kale (fresh or frozen)
  • 1 cup almond milk or any plant-based milk of your choice
  • 1 tablespoon chia seeds or flaxseeds
  • 1/4 tsp of cinnamon
  • 1 small apple
  • 1 tsp of lemon or lime juice
  • 1 tsp of amla powder (optional)
  • 1 tablespoon nut butter (like almond or peanut butter) for added creaminess (optional)

Instructions:

1. First, to make this healthy smoothie, put all the ingredients into a blender and blend until smooth. If the mixture is too thick, you might need to use a tamper to help it blend well. Keep blending until it’s thick and creamy.

2. If the mixture is too thick, add more milk or cold water gradually until you reach your desired consistency.

3. Taste and adjust sweetness if needed by adding a drizzle of maple syrup, or a few dates.

4. Pour into 1 large serving bowl or 2 smaller glasses.

5. Optionally, top your healthy smoothie with your favorite toppings such as granola, additional fruits, coconut flakes, or a sprinkle of chia seeds.

Customizing Your Perfect Smoothie Recipe

Lemon and limes

You can add any vegetables you like to your smoothie, such as carrots, cucumbers, Swiss chard, or cilantro. Fresh veggies not only boost the flavor but also add extra nutrients. For example, cilantro gives your smoothie a refreshing taste. Frozen fruits like pineapple help make your smoothie thicker, which is great for smoothie bowls. If you prefer a thinner consistency, fresh fruits are a good choice.

To make your smoothie thicker and creamier, freeze fruits like ripe bananas or berries before blending. This keeps it smooth without watering it down. Buying frozen berries in bulk, like from Costco, is an easy and cost-effective way to always have them on hand. Choose your favorite plant-based milk—almond milk is my top choice because it’s simple and tastes great. You can also use cashew or oat milk, depending on your preference.

Adding a splash of lemon or lime juice not only gives your smoothie a tangy flavor but also boosts your vitamin C intake, which supports your immune system. If you want to add more protein and creaminess, almond or peanut butter works well. But if you’re not a fan of peanut butter, you can skip it—smoothies are all about making it just how you like it!
